Peregrine Falcon

The state quarter program was launched in 1999, with five different quarters being issued each year for 10 years.

Many people wonder why Idaho put a Peregrine Falcon on their state quarter. It is not their state bird (that would be the Mountain Bluebird). It is found on every continent on earth except Antarctica, and for sure there would be some hanging around Idaho, but there's no strong connection.

My guess is because a potato might have looked silly.
